The Beet Mojito: A Bold Twist on a Classic Cocktail for the Holiday Season!

However, as we transition into the holiday season and the colder months, there’s an opportunity to reimagine this warm-weather favorite. While these techniques are classics, I sought to push the boundaries of beet cooking when developing a dish for my tasting menu in my cookbook, ENTERTAIN WITH FLAVOR — THE MASTER PLAN. The goal was to infuse more layers of flavor into the beets, transforming them into a standout starter. After much experimentation with traditional methods, I landed on a technique that uses orange and lime juice as the base, combined with warming spices like cinnamon, anise, and cumin. By cooking the red and golden beets separately, each retains its unique color and flavor, with the juices providing the perfect base for an earthy twist on the classic mojito. The result is a cocktail that’s bold, festive, and perfect not just for summer but for colder months too, thanks to the warm spices used in the beet cooking process.
