Rosemary Tom Collins!
The Tom Collins is an exemplary classic cocktail that is crafted using just a few essential ingredients: gin, freshly squeezed lemon juice, simple syrup, and club soda. Classic cocktails are popular and timeless, and the perfect basis for any great new cocktail. One of the easiest ways to bring freshness and a new combination of flavors to food is by introducing spices and herbs. Cocktails are no different. Fresh rosemary works best in citrusy cocktails with a hint of sweetness. Rosemary’s warm and piney tones are unique and inviting. Therefore, the fresh rosemary is a great complement to the classic Tom Collins.
Let’s start with preparing for the drink, making the lemon rosemary simple syrup:
Lemon Rosemary Simple Syrup
1/2 cup filtered water
1/2 cup sugar
1 rosemary spring
3 x 2” pieces of lemon peels
Combine the filtered water, the sugar, the rosemary spring, and the lemon peels in a small saucepan and bring to a boil. Stir until the sugar has fully dissolved. Lower the heat, cover, and let simmer for 5 minutes. Remove the rosemary spring and the lemon peels, and strain into a container. Allow to cool for 30 minutes.

1/2 oz lemon rosemary simple syrup
1/2 oz freshly squeezed lemon juice
1 oz gin
Club soda
Garnish
Lemon twist
Glass
Rock Glass
Fill a rock glass with ice cubes and add the rosemary simple syrup, the freshly squeezed lemon juice and the gin. Stir gently using a bar spoon and fill the rock glass with club soda. Garnish with the rosemary spring and the lemon peel.
