Roasted Tomato Bruschetta! 

Tomato Bruschetta is a culinary gem, showcasing the beauty of simplicity with fresh ingredients. Quality bread, quality extra virgin olive oil, and ripe tomatoes are essential for its success. Follow this recipe to perfection, and you’ll have a delightful appetizer ready for your next gathering. I remember when I was working as a General Manager at a thriving restaurant in Miami, I hesitated when the owner suggested adding bruschetta to our menu. Yet, it swiftly became a customer favorite, proving the enduring appeal of classic dishes. Bruschetta isn’t just about food; it’s about coming together to celebrate the joys of life, and is very easy to make!

Ingredients Roasted Tomato Bruschetta
6 tsp extra virgin olive oil
2 garlic cloves, minced
2 tsp fresh rosemary, finely chopped
1 tsp sea salt
1 tsp freshly ground black pepper
6 large plum tomatoes - quartered lengthwise
12 baguette slices, diagonally cut - each 3” to 4” long
12 tbsp homemade ricotta cheese (discover our Homemade Ricotta Cheese Recipe)

Instructions Cooking Roasted Tomato Bruschetta
Preheat the oven to 350°F. In a bowl stir together 6 tsp of extra-virgin olive oil, the 2 minced garlic gloves, the 2 tsp finely chopped fresh rosemary, 1 tsp of sea salt, and 1 tsp of freshly ground black pepper. Add the tomato quarters and stir to coat and marinate the tomatoes for about 5 minutes. Line a rimmed baking sheet with foil. Transfer the tomatoes from the marinade onto the foil, cut side down. Reserve the remaining marinade to brush the toasted baguette slices. Roast the tomatoes until the skin is blistered and tomatoes are very tender (about 50 minutes). Remove the tomatoes from the oven. Maintain the oven temperature.

Meanwhile, arrange the baguette slices on a baking sheet. Brush the top of each slice with the reserved marinade (including the garlic and rosemary bits). Toast the baguette on both sides in the oven until the top of each side is golden.

Spread 1 tbsp of homemade ricotta cheese on each baguette slice; sprinkle with freshly grounded pepper and place the roasted tomatoes on top of the ricotta.
