    Whip the yolks

    Whisk the egg yolks and granulated sugar in a large bowl until pale and doubled in volume.

    Make the chocolate base

    Combine the milk, heavy cream, and chopped chocolate in a large saucepan. Bring to a gentle simmer, stirring until melted, and heat the mixture to 180°F.

    Finish the mousse

    Gradually pour the hot chocolate mixture into the yolks and sugar, folding carefully with a spatula until light and even. Divide among six small rocks glasses, cover, and refrigerate for at least 3 hours.

    Mix the shortbread

    Heat the oven to 375°F. Knead the butter and flour together, then add the confectioners sugar, vanilla, and Baileys, if using. Continue until the dough comes together.

    Shape and bake

    Roll the dough on a floured surface and cut into rectangles. Prick with a fork for the traditional finish. Bake for 15 minutes and cool for about 10 minutes.

    Serve the shortbread with the chilled mousse. For the adult presentation, bake round cookies, sandwich two with mousse, and rest the cookie over a rocks glass containing aged dark rum.
