Ingredients Mousse Au Chocolate
80 gram egg yolk
40 gram granulated sugar
200 gram whole milk
200 gram heavy whipped cream
210 gram dark chocolate - chopped

Instructions Mousse Au Chocolate
Whisk together 80 grams of egg yolks and 40 grams of granulated sugar in a large bowl and beat the egg mixture until doubled in size. In a large pan, bring 200 grams of milk, 200 grams of heavy whipped cream, and 210 grams of chopped chocolate to a simmer. Stir until the chocolate is melted and heat the mixture to 180°F. Pour the hot chocolate mixture into the bowl with the egg yolks and sugar, and carefully fold it together using a spatula. The final mixture will be light and fluffy. Pour the mousse into six small rock glasses, cover with cling film, and refrigerate for at least three hours.

Ingredients Shortbread
130 gram unsalted butter, room temperature
190 gram all-purpose flour
50 gram powdered sugar
1 tsp vanilla extract (optional)
1 tsp Baileys Irish Cream (optional)

Instructions Shortbread
Preheat the oven to 375°F. In a bowl, knead the 130 gram unsalted butter, the 190 gram all-purpose flour until combined. Add the 50 gram powdered sugar, the 1 tsp vanilla extract and the 1 tsp Baileys Irish Cream. Knead until the dough comes together. Place the dough onto a floured surface, roll out and cut into rectangles. Use a fork to give the shortbread its traditional look. Bake for 15 minutes. Allow to cool for about 10 minutes before serving the shortbread with the chocolate mousse.

If you want to be creative and surprise your dinner guests with an adult version of this recipe, bake the shortbread as cookies. Fill two cookie layers with mousse, and serve the cookies on top of a rock glass filled with aged dark rum!
