Mom's Pancakes!!!!

Ingredients Pancakes
2 cups all-purpose flour
1/4 cup cane sugar
4 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 + 3/4 cup whole milk
1/4 cup butter (melted)
2 tsp vanilla extract
1 large egg
Garnish for Pancakes
Maple syrup
Fresh mixed berries
Powdered sugar
Instructions Pancakes
In a large mixing bowl, sift together the flour, baking powder, baking soda, salt, and cane sugar. In a separate mixing bowl, whisk together the milk and egg until well combined. Add the melted butter to the milk mixture and whisk until incorporated. Add the wet ingredients to the dry ingredients and whisk until just combined. Do not over-mix; a few lumps are okay. Heat a non-stick frying pan or griddle over medium-high heat and lightly grease with cooking spray. Using a 1/4-cup measuring cup, scoop the pancake batter onto the pan, spacing them about 2 inches apart. Cook until the tops of the pancakes are covered in bubbles and the edges start to look set, about 2 minutes. Use a spatula to flip the pancakes and cook for another 1-2 minutes, or until golden brown. Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruits, and powdered sugar.
