HERB RICOTTA RAVIOLI
Herb Ricotta Ravioli!
Satisfy your pasta cravings with this very simple homemade ravioli recipe. This dish features homemade Italian pasta stuffed with ricotta and herbs. You can prepare perfect ravioli every time with these steps, whether you’re a seasoned chef or a beginner in the kitchen.

Ravioli Dough
4 eggs
3 + 1/4 cup of 00 flour (pasta/pizza flour)
Warm water
1 pinch sea salt

Combine the 4 eggs with 3 + 1/4 cup of flour and a pinch of sea salt in a large mixing bowl. Transfer the dough to a floured surface and knead it by pushing down and away from you and turning it repeatedly until the dough feels smooth and satiny, about 7 to 10 minutes. Cut the dough in half and wrap in plastic wrap. Let it rest for at least one hour in the fridge.

As the dough rests, let’s make the herb ricotta filling:

Herb Ricotta Filling
150 gram grated Parmesan cheese
400 gram of homemade ricotta cheese (make twice the amount of our recipe)
50 gram fresh rosemary, oregano, basil and sage
1 egg
2 garlic cloves, diced
1 pinch sea salt
1 pinch freshly ground black pepper
1 pinch nutmeg

Blench the fresh herbs in boiling water, drain, finely chop and mix together with the remaining ingredients.

Cooking the Herb Ricotta Raviolis
Take the rested dough out of the fridge and roll it into two very thin sheets. If you don’t have a pasta machine, make sure the sheets are as thin as even possible. Spoon small amounts of the filling onto one sheet, leaving a gap of 1.5“ between each scoop. Fold the second sheet over the sheet with the filling. Smooth out any air. Cut out the raviolis with a sharp knife. Remove the raviolis from the countertop and check if each ravioli is sealed at the edges. If not, use cold water to seal properly.
Cook the ravioli in boiling salted water for about 5 to 10 minutes. The cooking time depends on the thickness of your dough. If you rolled out the dough by hand, cook for 10 minutes or until al dente. If you used a pasta machine, 5 minutes cooking time should be enough. Once the ravioli dough is cooked al dente, drain the raviolis using a colander and transfer the ravioli to a pre-heated frying pan with melted butter. Sauté the cooked raviolis until golden brown. Sprinkle freshly grated Parmesan cheese on top.
