Gin Daisy
The refreshing and light Gin Daisy is often ordered during the summer months or in warm climates. Living in Miami and Puerto Rico makes the Gin Daisy my go to cocktail as an aperitif all year long. This drink’s special charm lies in its refreshing blend of gin, lemon juice, homemade grenadine, and a splash of sparkling soda water, providing a well-balanced taste. So, if you’re seeking a summer sip, a cocktail that marries classic appeal with modern charm, the Gin Daisy is your perfect choice!
Homemade Grenadine
A ripe pomegranate, heavy and bursting with juice, is ideal for this recipe. Using a very sharp knife, score the sides of the pomegranate and peel from top to bottom. Gently pull the fruit open into sections, and extract the seeds. Place the pomegranate seeds in a Ziploc bag, press out as much air as possible, seal the bag and roll over the seeds with a rolling pin. Cut a small hole in the bottom corner of the bag and strain the pomegranate juice into a glass. One ripe, juicy pomegranate yields approximately half a cup of juice.

1/2 cup pomegranate juice
1/2 cup granulated sugar
3 x 2” pieces of lemon peels

In a saucepan, combine the pomegranate juice and sugar and bring to a slow boil. Add the lemon peels and simmer for 15 minutes. The homemade grenadine for your Gin Daisy should be cooled down before being used.
